{"id":3530,"date":"2017-03-12T18:07:13","date_gmt":"2017-03-12T17:07:13","guid":{"rendered":"https:\/\/www.lescharcuteries.fr\/sante-nutrition\/"},"modified":"2021-11-16T10:27:54","modified_gmt":"2021-11-16T09:27:54","slug":"health-and-nutrition","status":"publish","type":"page","link":"https:\/\/www.lescharcuteries.fr\/en\/health-and-nutrition\/","title":{"rendered":"Health and nutrition"},"content":{"rendered":"<p>[vc_row][vc_column][vc_column_text]<\/p>\n<h3><span style=\"color: #c00d4f;\"><strong>CharcuterieS with the emphasis strictly on the plural \u2013 there\u2019s not just ONE but MANY different charcuteries<\/strong><\/span><strong><span style=\"color: #c00d4f;\">.<\/span><\/strong><\/h3>\n<div style=\"float: right; margin-left: 30px; margin-top: 20px;\"><iframe loading=\"lazy\" src=\"https:\/\/www.youtube.com\/embed\/3yhrETHptBg\" width=\"500\" height=\"280\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\" data-mce-fragment=\"1\"><\/iframe><\/div>\n<p>The vast diversity of raw materials, production methods, recipes and ingredients in France provides a huge palette of flavours and textures, creating endless recipes for varied, tasty and convivial mealtimes, that will have everyone reaching for more.<\/p>\n<p><strong>Eaten in moderation and as part of a healthy, balanced diet, charcuteries have earned their place on our mealtime menus.<\/strong><\/p>\n<p><strong>While each category of charcuterie has its own nutritional values, the whole charcuterie family is characterised by:<\/strong><\/p>\n<ul>\n<li><strong>Proteins with high biological value<\/strong> containing essential amino acids<\/li>\n<li><strong>Quality fats<\/strong>: 57% unsaturated fats, of which more than 12% polyunsaturates and virtually no trans fats.<\/li>\n<li><strong>High vitamin<\/strong> <strong>content<\/strong>, particularly B3, B6, PP and B12<\/li>\n<li>Trace elements including heme iron, zinc and selenium.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>[vc_Brique_Rose titre=&#8221;Key Fact&#8221; texte=&#8221;<strong>The French eat less charcuterie than some of their European counterparts: the average daily per capita charcuterie consumption in France is 31g, compared to 38g in Italy, and 52g in Spain and Germany (Source: INCA 2)<\/strong>.&#8221;]<\/p>\n<h3><span style=\"color: #c00d4f;\"><strong>Committed French producers<\/strong><\/span><\/h3>\n<p><strong>To always remain one step ahead of consumer expectations in terms of health and nutrition, and deliver a range of quality foods, producers have made the following commitments:<\/strong><\/p>\n<div style=\"float: right; margin-left: 30px;\"><iframe loading=\"lazy\" src=\"https:\/\/www.youtube.com\/embed\/eh9RRDZAgAY\" width=\"500\" height=\"280\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/div>\n<p><strong>Less salt, less fat<\/strong><\/p>\n<p>In 2010, charcuterie producers large and small signed the <strong>1<sup>st<\/sup> voluntary commitment charter for progress towards healthy diets and have committed to reduce average salt and fat in charcuterie by 5%,<\/strong> <strong>setting maximum levels for the 9 most consumed categories of charcuterie:<\/strong> premium cooked ham, dry-cured ham, lardons, country p\u00e2t\u00e9s, liver p\u00e2t\u00e9s &amp; mousses, pork rillettes, smooth-paste sausages, premium dry-cured sausages and pure pork dry-cured sausages. To this end, <strong>in 2015<\/strong>, <strong>charcuterie makers signed a new collective agreement aiming to extend this 5% reduction to 12 additional categories<\/strong> not included in the PNNS charter (French National Nutrition and Health Programme).<\/p>\n<p>As a result they have reduced:<\/p>\n<ul>\n<li>Salt content by 1,040 tonnes\/per annum<\/li>\n<li>Fat content in the major charcuterie categories by 2,836 tonnes\/per annum<\/li>\n<\/ul>\n<p><a href=\"http:\/\/agriculture.gouv.fr\/sites\/minagri\/files\/documents\/alimentation\/pdf\/accord_collectif_secteur_charcuterie_signe_cle0c1313.pdf\" target=\"_blank\" rel=\"noopener\">&gt; Pour en savoir plus, la charte FICT est consultable sur le site du Minist\u00e8re <\/a><\/p>\n<p>&nbsp;<\/p>\n<div style=\"float: right; margin-left: 30px; margin-top: 20px;\"><iframe loading=\"lazy\" src=\"https:\/\/www.youtube.com\/embed\/r13FSWYr2A8\" width=\"500\" height=\"280\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/div>\n<p><strong>Less nitrites<\/strong><\/p>\n<p>Using the very latest technological advances, producers have commited to reduce their use, in number and quantity alike.\u00a0 The use of nitrites is kept to a strict minimum, while ensuring the microbiological safety (preventing botulism, salmonella and listeria) and the organoleptic quality of the products.<\/p>\n<p>This commitment, at the wish of charcuterie makers, is clearly stated in the Code of Practice for charcuterie makers (French: <em>Code des Usage de la Charcuterie, de la Salaison and des Conserves de Viande<\/em>).\u00a0 European legislation sets the maximum use of additives (nitrites) at no more than 150mg\/kg.<\/p>\n<p>&nbsp;<\/p>\n<p>[vc_Brique_Jaune titre=&#8221;<strong>Did you know<\/strong> <strong>?<\/strong>&#8221; texte=&#8221;<strong>Charcuterie makers in France are the only producers in Europe to have set a maximum level that is 20% below the European legislation, at 120mg\/kg<\/strong>.&#8221;]<\/p>\n<p>&nbsp;<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<p>[\/vc_column_text][\/vc_column][\/vc_row]<\/p>\n","protected":false},"excerpt":{"rendered":"<p>[vc_row][vc_column][vc_column_text] CharcuterieS with the emphasis strictly on the plural \u2013 there\u2019s not just ONE but MANY different charcuteries.
